What Is Sourdough Discard?
Sourdough discard is the portion of starter you remove before feeding it. It’s not bad or expired—it’s just unfed starter. And it still has tons of flavor and baking possibilities!
Instead of tossing it, you can use it in all kinds of recipes: pancakes, muffins, crackers, biscuits —and especially desserts. But my favorite is pizza crust!

Why Should You Use It?
- No waste: Using your discard helps you get the most out of your flour and starter
- Easy to bake with: No long rise times or fermentation needed
- Delicious results: Adds a subtle tang, moisture, and depth to your favorite bakes

How Do I Store Sourdough Discard?
If you’re not ready to bake right away, store your discard in a jar in the fridge, with a locked lid. You can keep adding to it until you’re ready to bake something fun.
