Autumn Skillet Chicken with Apples and Sweet Potatoes

Autumn Skillet Chicken with Apples and Sweet Potatoes

Fall dinners just hit a little differently, don't they? There's something about apples, sweet potatoes, fresh herbs, and a cozy meal cooking in the oven that makes you want to slow down and gather everyone around the table.

This Autumn Chicken Skillet brings all those delicious fall flavors together with crispy, golden chicken thighs, tender vegetables, and just the right amount of sweetness from fresh apples. It's simple, hearty, and the kind of dinner that makes your whole house smell amazing!

And can we talk about how much we love a one-pan dinner? Because as much as I love cooking, I don't always love the cleanup that comes afterward! Everything comes together in one cast iron skillet, and once it's in the oven, you can let it do its thing. It's a beautiful, seasonal dinner that looks like you spent hours making it but is easy enough for a busy weeknight. And of course, I'd serve it with a loaf of fresh sourdough bread!

Why You'll Love This Autumn Chicken Skillet ❤️

I love a recipe that feels a little special but doesn't require an entire afternoon in the kitchen.

It's a complete meal in one skillet. You've got your protein, vegetables, and a little natural sweetness from the apples.

It uses simple, seasonal ingredients. Apples, sweet potatoes, fresh herbs, and chicken are easy to find and especially delicious together during the fall months.

The chicken gets beautifully crispy. Starting the chicken thighs skin-side down in a hot cast iron skillet gives them that golden crust before they finish cooking in the oven.

It's perfect for busy evenings. Once everything is assembled, the oven does most of the work.

And if you have a loaf of sourdough sitting on the counter, I highly recommend serving a few slices alongside dinner.

How to Get Crispy Chicken Skin Every Time

If you're going to make chicken thighs in a cast iron skillet, you might as well get that skin nice and crispy.

Here are a few things that make a difference.

1. Dry the chicken first

Moisture is the enemy of crispy skin.

Pat the chicken dry before seasoning it, even if it looks dry already.

2. Start skin-side down

Place the chicken skin-side down in a properly heated skillet.

Give it time to develop that beautiful golden crust before flipping.

3. Don't move the chicken too soon

If the chicken sticks when you try to flip it, give it another minute.

As the skin browns, it will usually release more easily from the pan.

4. Keep the skin above the liquid

When you return the chicken to the skillet for roasting, make sure the skin is facing up and isn't submerged in the sauce.

Otherwise, you'll lose some of that crispiness you worked so hard to create.

5. Don't cover the skillet

Leave the skillet uncovered while roasting.

Covering it traps steam, which softens the chicken skin.

Do I Have to Use a Cast Iron Skillet?

No, but I love using one for this recipe.

Cast iron retains heat beautifully, which makes it perfect for searing chicken and then transferring everything directly into the oven.

It also gives you that rustic, cozy presentation that makes a simple dinner feel a little more special.

If you don't have cast iron, you can use any large oven-safe skillet or a Dutch oven.

Just make sure the skillet and handle are oven-safe to at least 400°F.

If your skillet isn't oven-safe, transfer the apple and sweet potato mixture to a baking dish and arrange the chicken thighs on top before roasting.

Easy Variations to Try

One of my favorite things about skillet dinners is how easily you can change them depending on what you have in the refrigerator.

Add Brussels sprouts. Halved Brussels sprouts roast beautifully alongside the apples and sweet potatoes.

Try butternut squash. Swap some or all of the sweet potatoes for cubed butternut squash.

Make it a little sweeter. Add an extra drizzle of maple syrup to the pan sauce.

Add fresh sage. Sage pairs beautifully with apples and chicken and gives this dish an especially cozy fall flavor.

Use pears instead of apples. Firm pears are delicious here, although they may soften more quickly.

Add a little heat. A pinch of crushed red pepper flakes creates a nice contrast with the sweet apples.

Maybe it's the cooler weather, the cozy dinners, or the fact that apples and sweet potatoes seem to find their way into just about everything I make this time of year. Whatever it is, this Autumn Chicken Thigh Skillet is exactly the kind of dinner I want on the table when the evenings start getting a little cooler. We're talking crispy, golden chicken thighs, tender sweet potatoes, juicy apples, and a buttery, savory pan sauce that brings everything together.

The apples add just enough sweetness to balance the savory chicken, while the sweet potatoes roast underneath and soak up all those delicious juices. And the best part? Everything cooks in one skillet!

Ingredients

  • 2 tbsp olive oil
  • Salt
  • Pepper
  • 4 skin-on chicken thighs
  • 4 apples, diced
  • 3 large sweet potatoes, diced

Autumn sauce

  • 2 large lemons, juiced
  • 1/2 cup maple syrup
  • 1 tbsp ranch seasoning

Directions

  1. Preheat your oven to 400°F (200°C).

  2. In a large oven-safe skillet (I prefer cast iron), heat 2 tablespoons of olive oil over medium-high heat. Season the chicken thighs with salt and pepper, or whatever seasonings you like best!

  3. Once the oil is shimmering, add the chicken thighs skin-side down to the skillet. Sear them for about 5-7 minutes until the skin is crispy and golden brown. Flip the chicken and sear the other side for another 3-4 minutes.

  4. Peel and dice your sweet potatoes, and dice your apples. You can peel your apples to but I like the keep the skin on for the texture!

  5. Remove the chicken from the skillet and set aside. In the same skillet, add the diced sweet potatoes and apples and toss them in the remaining oil. Sauté for 5 minutes, stirring occasionally until they start to soften.

  6. While those are cooking, in a small bowl whisk together your maple syrup, lemon juice and ranch seasoning until smooth.

  7. Return the chicken thighs to the skillet, nestling them among the sweet potatoes and apples and pour over the lemon maple mixture.

  8. Transfer the skillet to the preheated oven and roast for 25-30 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) and the sweet potatoes are tender.

  9. Remove from the oven and let it rest for 5 minutes before serving. Enjoy the warm, autumnal flavors!
