Not at all! Your starter is more resilient than you think. It might be a little sluggish, but with one or two feedings (or a rest in the fridge), it’ll spring back to life.
Simply seal the jar and tuck it into the fridge. It will happily wait for you while you’re away. When you get back, give it a feeding or two, and you’ll be ready to bake again.
Nope! Don’t feel pressured. Use it as often as it fits into your life. And when you do bake often, have fun trying discard recipes — from pancakes to crackers, there’s no waste in sourdough.
