Ingredients
4 tablespoons unsalted butter, melted and browned
3 cups rolled oats
1 cup sourdough discard
1 medium ripe banana, mashed
1 teaspoon vanilla extract
2 large eggs
1/2 teaspoon salt
2 teaspoons baking powder
1 cup milk
1/4 cup maple syrup
1 cup diced strawberries
Directions
Preheat your oven to 350°F (175°C) and grease a 9x9 inch baking dish with butter or non-stick spray.
In a small saucepan over medium heat, melt the unsalted butter. Continue to cook the butter, swirling occasionally, until it turns golden brown and becomes fragrant, about 4-5 minutes. Remove from heat and allow to cool slightly.
In a large mixing bowl, combine the rolled oats, sourdough discard, mashed banana, vanilla extract, eggs, salt, baking powder, milk, and maple syrup. Stir well until combined and smooth.
Pour the brown butter into the oat mixture, reserving a tablespoon for drizzling later. Mix until fully incorporated.
