This savory sourdough breakfast casserole is everything you want on a slow morning. It's warm, filling, and easy to prep ahead. It’s the perfect balance of crusty sourdough, fluffy eggs, melty cheese, and savory sausage. Best of all, it can be assembled the night before so you can spend your morning sipping coffee and enjoying your family instead of cooking.

Ingredients

4–5 cups sourdough bread, cubed (day-old works best)
1 lb breakfast sausage (pork or turkey)
8 large eggs
1½ cups milk or half-and-half
1 - 1 ½ cups shredded cheese (cheddar, Colby Jack, or a blend)
2 cups shredded hashbrowns/ potatoes
1 tsp salt
1 tsp pepper
1 tsp garlic powder
Optional add-ins: sautéed onions, bell peppers, spinach, or mushrooms

Directions

Grease a 9×13 baking dish and spread the cubed sourdough evenly across the bottom.
In a skillet, cook the sausage until browned and fully cooked. Drain excess grease.
Sprinkle the cooked sausage evenly over the sourdough bread.
Add any optional veggies, if using.
In a large bowl, whisk together the eggs, milk, half of the shredded cheese, salt, pepper, and garlic powder.
Pour the egg mixture evenly over the bread and sausage.
Top with the remaining shredded cheese.
Cover and refrigerate overnight, or let sit for at least 30 minutes before baking.
When ready to bake, preheat oven to 350°F.
Bake uncovered for 40–45 minutes, or until the center is set and the top is lightly golden.
Let rest for 5–10 minutes before slicing and serving.
