  • 1 whole chicken or 2–3 lbs bone-in chicken (backs, thighs, or a carcass)
  • 8–10 cups water (enough to fully cover)
  • 1 onion, halved
  • 2–3 carrots, chopped
  • 2–3 celery stalks, chopped
  • 3–4 garlic cloves, smashed
  • 1–2 teaspoons ground turmeric
  • 1–2 teaspoons fresh cracked black pepper
