Cozy meal plan Monday!

Here is a list of meals that my family not only requested but also enjoyed all last week! There is a variety of protein and cooking times in this recipe, but all have one thing in common. They are simple to make and the whole family loved it!


Monday- Lasagna Soup

Tuesday - Breakfast for dinner

Wednesday- Spaghetti meatball sandwiches

Thursday - Grilled steak and homemade fries

Friday- Chicken bog

Saturday - Chili and gingerbread sourdough

Sunday -Chicken sheet pan dinner


LASAGNA SOUP RECIPE:

Ingredients:
2 lbs ground beef
1 small onion, diced
3–4 cloves garlic, minced
1 tsp salt
1 tsp Italian seasoning
2 tbs tomato pasta
½ tsp dried oregano
1 (24 oz) jar marinara sauce
6-8 cups chicken or beef broth
1 package lasagna noodles, broken into pieces
1 cup shredded mozzarella cheese
2-3 handfuls of spinach

RECIPE:
✨In a large soup, pot and 1 tablespoon of olive oil and your diced onion. Cook on medium heat for 4-5 minutes until translucent.
✨Add your minced garlic and ground beef to the pot. Brown your meat over medium heat, and drain the grease if needed.
✨Add your seasonings and tomato paste and cook together for 5 minutes so all the flavors melt together.
✨Add your marinara sauce and chicken broth and bring to a boil.
✨Stir in broken lasagna noodles. Reduce heat and simmer 12–15 minutes, stirring occasionally, until noodles are tender.
✨Stir in your spinach and mozzarella cheese until wilted and melted. Serve with a dollop of ricotta cheese and enjoy!

GRILLED STEAK AND HOMEMADE FRIES:

Our favorite steak is a grilled New York strip with salt and pepper!

BEEF TALLOW HOMEMADE HAND CUT FRIES -

INGREDIENTS:
4 large russet potatoes
1 quart beef tallow, enough to submerge fries in your pot.
Sea salt, to taste
Optional: a pinch of garlic powder or seasoned salt for finishing (we used Parmesan and old bay)

RECIPE:
✨Peel the potatoes (optional for a rustic style).
✨Cut into even matchsticks—about ¼-inch thick.
✨Place them in a large bowl of cold water and let soak for at least 30 minutes, or up to several hours in the fridge!
✨In a deep, heavy pot or Dutch oven, melt the beef tallow over medium heat.
✨Fry your potatoes in small batches for 7-9 minutes until golden brown (you can also double fry if you have time for extra crispness) fry for 3-4 minutes, let rest for 10 and fry again for 3-4 minutes.
Finish with salt and Parmesan cheese and enjoy!

CHICKEN BOG:

Ingredients -

1 whole chicken or 2–3 chicken breasts (cooked and shredded)

2 cups long-grain white rice

1 lb smoked sausage (Conecuh, kielbasa, or rope sausage), sliced

1 medium onion, diced

2 cloves garlic, minced

1 tsp salt (plus more to taste)

2 handfuls of spinach.

1 tsp black pepper

½ tsp paprika

RECIPE - 

✨Preheat a large pan over medium high heat.

✨Slice and brown your sausages for 5 - 6 minutes.

✨Remove your neat from the pan and add your onions. Stir until translucent for 2 minutes. Add your garlic and cook for 2 more minutes.

✨Cook your rice and add to the pot, add 1/4 cup of broth if you would like it creamier.

✨Stir in your shredded chicken and spinach, cook for 5 minutes before serving warm!

CHILI AND GINGERBREAD SOURDOUGH:

RECIPE -

  • 1 lb Ground beef (or venison)
    1 lb Ground pork
    1 diced sweet Onion
    1 diced Pepper
    2 tbs Worscheshire
    2 tbs Brown sugar
    3 tbs Tomato paste
    1 10oz can Crushed tomatoes
    6 cups Chicken broth
    2 cans Black beans
    1 can Kidney beans
    1 can Chili beans
    Cook on low 30 minutes - 3 hours & serve warm 🤍

  • Gingerbread Sourdough – Acts of Sourdough

CHICKEN SHEETPAN DINNER:

I also call this a "kitchen sink" dinner which is great to have at the end of the week so you can use up some extra veggies in your fridge before they go bad

Ingredients -

1½–2 lb chicken thighs or breasts (diced and marinated to your liking)

1 lb baby potatoes (halved)

2 cups broccoli, green beans, or carrots

2–3 tbsp olive oil

1 tsp salt

½ tsp black pepper

1 tsp garlic powder

1 tsp Italian seasoning

Recipe -

✨Preheat oven to 425°F

✨Add diced chicken and vegetables to a large sheet pan.

✨Drizzle with olive oil and sprinkle evenly with salt, pepper, garlic powder, and Italian seasoning.

✨Toss to coat.

✨ Roast everything 25–35 minutes, flipping once if desired, until chicken reaches 165°F and veggies are tender.

✨Squeeze fresh lemon over top or sprinkle with parmesan.
