Penicillin Soup
I don't know about you, but we've been really going through it this season. My kids seem to be on a sickness carousel and by default so is this warm and cozy chicken soup packed with garlic, lemon, herbs, and healing goodness. “Penicillin Soup” is the bowl you crave when someone is under the weather, or you just want something nourishing and simple. Pairs perfectly with fresh sourdough!
🍲 Ingredients
1 onion, diced
3 carrots, peeled and diced
2 celery, diced
2 tsp minced garlic
1 tsp ground turmeric
1 tsp dried thyme
1 tsp dried oregano
3 boneless skinless chicken breasts
8 cups broth (2 cartons)
1lb orzo
3 eggs, whisked
Squeeze of one lemon
Salt and pepper to taste
👩🍳 How to Make Penicillin Soup
Add your onions, carrots, celery, and garlic to a pot over medium heat and sauté for 5 to 7 minutes until translucent. Add and bring to a boil.
At your three chicken breast to the broth and cook over medium heat for 20 to 25 minutes until the chicken breasts cook through.
When your chicken is cooked, remove from the broth and shredded with a fork, or use your kitchen aid!
Bring your broth back up to a boil and add in your orzo and cook according to the package.
When your orzo was cooked to add your chicken back in.
Whisk three eggs and add to your pot slowly and stirring continuously. This makes a creamy, nutritious broth without needing any cream.
As a squeeze of lemon and all your seasonings and serve warm.
