Sheet Pan Quesadilla Bake with Ground Beef

Ingredients

  • 1 tablespoon olive oil

  • 1 small onion, diced

  • 1 bell pepper, diced

  • 1 pound ground beef

  • 1 packet taco seasoning

  • 1/3 cup water

  • ½ cup sour cream

  • 1 cup canned black beans, drained and rinsed

  • 1 cup corn, drained

  • 8–10 large burrito-size flour tortillas

  • 3–4 cups shredded Mexican-blend or cheddar cheese

  • 2 tablespoons melted butter or olive oil, for brushing

Directions

  1. Preheat your oven to 415°F and line a large baking sheet (18x13 inches) with parchment paper for easy cleanup.

  2. In a skillet over medium heat, add 1 tablespoon of olive oil. Once hot, add the diced onion and bell pepper. Sauté until softened, about 3-4 minutes, until fragrant and translucent.

  3. Add the ground beef to the skillet. Cook, breaking it apart with a spatula, until browned and cooked through, about 5-7 minutes.

  4. Stir in the taco seasoning and water, mixing well. Simmer for 2-3 minutes until the mixture thickens slightly. Remove from heat and fold in the black beans and corn until evenly combined.

  5. On the prepared baking sheet, lay out 5-6 tortillas, overlapping them slightly to cover the bottom of the sheet. Spread an even layer of sour cream all over the bottom of the tortilla shells, following with a layer of the ground beef mixture then black beans and corn.

  6. Finish by sprinkling the shredded cheese.

  7. Fold the tortillas hanging over the sides of the pan toward the center to cover the filling. Add the last two tortillas in the center if needed to completely cover the top.

  8. Place a second sheet pan directly on top of the quesadilla to weigh everything down.
  9. Bake with the second pan on top for at 415 for 15 minutes. Carefully remove the top sheet pan and continue baking for another 5–10 minutes, or until the tortillas are golden brown and crispy.

  10. Once baked, remove from the oven and let cool for 5 minutes. Cut into squares or wedges and serve warm with your favorite toppings such as salsa, sour cream, or guacamole!
