Sunday Meal Prep - High maintenance Sunday for a low maintenance Monday
This is everything I prepped in one day, to ensure a little bit more of a predictable and smooth week for my family!
This season has for sure felt like survival mode, and I'm sure a lot of you can relate, because such is life. We have busy schedules, back to school, sick kids, travel and now the holidays... It seems like the only thing I have control over anymore, is our meals, and you know what! That is enough for me.
So whether you eat or drink or whatever you do, do it all for the glory of God.”

MORNING:
Feed my starter.
Make bagel breakfast sandwiches, store the extras.
Start my sandwich bread (let rise through lunch)
Prep/ cut your homemade French fries and let sit in an ice bath.
Make chicken salad.
LUNCH:
Put buffalo chicken in crockpot.
Make baked spaghetti and store in fridge.
Make pasta salad and store in fridge.
Peel carrots for raw carrot salad.
Cut sourdough/ prep pumpkin French toast casserole.
Hard boil eggs for the week.
Shape sandwich bread and leave for second rise.
DINNER:
Fry your French fries/ prep other sides for dinner (we had steak, fries and veggies)
Make pumpkin banana muffins for dessert/ this week's breakfast.
Make sourdough bread to rest overnight.
Bake sandwich bread.
Store buffalo chicken in the fridge.
Overall, all of this prep took 3 - 4 hours of back and forth in the kitchen during an otherwise lazy Sunday! And now we have meals planned, food prepped, and lunch for the week that doesn't include the inevitable dinner leftovers.
MEAL PLAN:
Sunday - Steak, French fries, veggies/ salad.
Monday - Buffalo chicken Caesar salad.
Tuesday - Baked spaghetti.
Wednesday - Autumn chicken skillet.
Thursday - Focaccia pizza
Friday - Chilli
Saturday - French onion beef stroganoff.

BONUS RECIPE: BEEF TALLOW HAND CUT FRIES
INGREDIENTS:
4 large russet potatoes
1 quart beef tallow, enough to submerge fries in your pot.
Sea salt, to taste
Optional: a pinch of garlic powder or seasoned salt for finishing (we used Parmesan and old bay)
RECIPE:
•Peel the potatoes (optional for a rustic style).
•Cut into even matchsticks—about ¼-inch thick.
•Place them in a large bowl of cold water and let soak for at least 30 minutes, or up to several hours in the fridge!
•In a deep, heavy pot or Dutch oven, melt the beef tallow over medium heat.
•Fry your potatoes in small batches for 7-9 minutes until golden brown (you can also double fry if you have time for extra crispness) fry for 3-4 minutes, let rest for 10 and fry again for 3-4 minutes.
Finish with salt and Parmesan cheese and enjoy!
