This simple and classic peach cobbler is deemed the “simplest sourdough cobbler” for good reason. It was really important to me to develop a recipe that can be made all year round and use a large amount of your sourdough discard so you can feel good about a nostalgic dessert, and not wasting your sourdough. This is a quick recipe to make, and a lovely dish to enjoy.

โค๏ธ Why You’ll Love Sourdough Discard Peach Cobbler
Cobbler is one of my favorite desserts! and peach is one of my favorite dessert fruits because of how delicious and versatile they are. So, I wanted to develop a recipe that you can make all year round with frozen peaches. The cobbler is made with a heaping amount of sourdough discard and much more of a cake topping than a crumble!
๐ฒ Ingredients
Sourdough Discard – Inactive sourdough starter that hasn’t been fed. It is equal parts flour and water that has already risen and fallen and now can be added to a multitude of recipes.
Flour – I use organic, unbleached, All-purpose flour in all my recipes.
Peaches – Frozen peaches. I specifically chose frozen peaches for this recipe so you can make it year-round, but you can definitely substitute for fresh peaches.
Eggs – 2 large eggs.
Butter – one stick of melted butter.
Baking powder – this gives the topping it’s fluffy texture.
Sugar – This recipe uses all brown sugar, but if you would like to substitute for granulated sugar.

๐ฉโ๐ณ How to Make Sourdough Discard Peach Cobbler
- Pour your bag of frozen peaches into a 9×13 baking dish and toss with brown sugar and cinnamon.
- Melt one stick of butter and let cool.
- In a small mixing bowl whisk together flour, salt, baking powder, and cinnamon and then set aside.
- In a large mixing bowl, pour in your melted butter and add the brown sugar. Whisk until combined. Add in the eggs, milk, vanilla extract, and sourdough discard, and mix until there are no streaks.
- Add in the flour and mix until everything is just combined.
- Scoop the batter directly on top of your peaches and gently spread evenly.
- Preheat your oven to 350 degrees and bake for one hour.
- Sprinkle extra cinnamon sugar right when it comes out of the oven and let cool slightly. This is best served warm with your favorite ice cream, or whipped cream!
๐ช Tips and Tricks
- Use whatever peaches you have on hand
- If you are using fresh peaches in this recipe, bake your cobbler for 40-50 minutes. There will be less moisture in the fruit when using fresh peaches, so it will need less time to bake.
- If you don’t have any sourdough discard on hand, you can substitute it for 1 cup of milk (or cream) and the texture comes out extremely light and fluffy!
