It’s fall so I know everyone is in a craze over pumpkin, but I implore you to let apples have their moment with an Apple fritter loaf. This delicious bread can be enjoyed warm or at room temperature, making it perfect for breakfast with a cup of coffee or as an afternoon snack. Serve it plain, or pair it with a dollop of whipped cream or a smear of butter for an extra decadent treat.

🍲 Ingredients

Sourdough Discard – Unfed, inactive sourdough starter that’s been stored on the counter or in the fridge.

Flour – Unbleached all-purpose flour, or you can use bread flour for a chewier texture.

Sugar – I think the flavors of brown sugar are very nostalgic of fall, but you can use granulated sugar too if that’s what you have one hand.

Oil – melted coconut oil, or any neutral oil you have. You can even use butter instead of oil.

Apples – literally any apple you like best will work in this recipe. If you like more of a tart flavor, use granny smith apples. If you want a sweeter apple, use cosmic or Honeycrisp apples.

Applesauce – Unsweetened applesauce brings a strong apple flavor, plus a moist flavor.

Cinnamon – It’s not a proper fall dish without ground cinnamon, in my opinion.

Eggs – 2 large eggs.

👩‍🍳 How to Make Apple Fritter Bread

  • Start by melting your coconut oil and letting it cool.
  • Whisk together all your dry ingredients in a small mixing bowl and set aside.
  • Peel and chop your apples, toss them in ¼ cup brown sugar and 1 tsp of cinnamon. (If you want to cook your apples before baking, melt these ingredients together in a saucepan on the stove with one tablespoon of butter)
  • In a large mixing bowl, whisk your eggs, oil, ½ cup of brown sugar, sourdough discard, and applesauce together there until there are no more streaks. Add your dry ingredients and mix until everything is fully combined.
  • Add your apple mixture to the batter and fold together.
  • Transfer your batter into a greased loaf pan.
  • Top with your fritter crumble mixture.

Crumble Mixture

  • Melt butter, brown sugar, and flour together until crumbly.
  • Preheat your oven to 375 degrees and bake for 45 – 50 minutes until it can pass the toothpick test.
  • Let cool slightly but serve warm!

  • If you want to top off this apple fritter bread with a maple glaze, whisk together 1 tablespoon of maple syrup, 1 cup of powdered sugar, and 2 tablespoons milk until smooth. Adjust the consistency as needed. 
  • Add pecans or walnuts to the crumble mixture on top for more flavor and texture! add 1/2 cup of chopped nuts and 2 extra tablespoons of butter.
  • Passing the toothpick test means you can stick a toothpick or butter knife straight through the middle of the thickest part of the bread and the toothpick or knife come out clean. This is a sure sign that the bread is done.
