This simple, delicious breakfast bread is made with your favorite sandwich bread recipe. It’s the nostalgic flavor that millennials remember having every morning before school – toast, butter, cinnamon sugar, but now with a bit of vanilla glaze because we’re fancy! I’ve included my sandwich bread recipe because it makes two loaves, so now you can have cinnamon toast bread for breakfast, and still have a loaf for lunch!

❤️ Why You’ll Love Cinnamon Sugar Pull Apart Bread

This is less of a “recipe”, per say, and more of a technique on how to use your favorite recipe a different way. The recipes I develop are meant to make the art of baking bread delicious, exciting, simple, but especially approachable in your own home. This is a means to do that well. I hope you love it!

🍲 Ingredients

Sandwich BreadThis is a “recipe” made with your favorite sandwich bread dough. I have included mine because it makes two loaves, so you can make a breakfast bread, and a lunch loaf in one batch.

Brown Sugar – Organic brown sugar.

Cinnamon – Ground cinnamon.

Butter – Good quality butter, melted.

Maple glaze – made with powdered sugar, maple syrup and milk. But you can certainly use a cream cheese icing to make this more of a “cinnamon roll” bread.

👩‍🍳 How to Make Cinnamon Sugar Pull Apart Bread

  • Start by prepping your favorite sandwich bread recipe (I’ve included mine here). Before shaping, roll out your bread dough into a long rectangle.
  • Melt the butter and brush it over the surface of the dough. In a small bowl, mix together brown sugar and cinnamon, and sprinkle it over all the butter, covering the whole surface.
  • Use a bench scraper or large knife to cut the dough in half long ways, from the top all the way to the bottom. Then cut each half into 5 equal square pieces. If they are a little uneven that is fine, it will still look good in the pan!
  • Afte cutting all your pieces, stack them one in front of the other in the pan so they are touching. Cover and let rise for one hour until it has expanded in the pan and visibly puffy.
  • Once your dough has risen, preheat your oven to 390 degrees.
  • Bake your bread for 25 – 27 minutes until golden brown on top.
  • While your bread is baking, mix together the vanilla glaze by whisking together the powdered sugar, maple syrup, and milk. If you prefer the glaze a little thinner, add more milk one tablespoon at a time.
  • Drizzle the glaze over your bread while it is still warm.
  • Pull each piece apart and enjoy!

🪄 Tips and Tricks

  • I may be biased, but using my sandwich bread recipe works well, and is a “smarter not harder” way to bake bread since it makes two loaves. One for breakfast, one for lunch.
  • Serving this bread warm is the best way to serve this bread. Make a little extra glaze so you have it on hand when you want to warm up the leftovers.

🗒 Variations

I have many “cinnamon roll” style breads on my website that are perfect for breakfast or an after-dinner snack. These are some of our most popular!

🗒 Substitutions

The biggest substitution you can make is in choosing your sandwich bread recipe, but the other is in the glaze, if you like a cream cheese icing more – I have a cream cheese icing in my cinnamon roll focaccia muffin recipe that would work very well here!

🗒 Best served with

  • Breakfast
  • You’re favorite cup of coffee
  • A spring brunch spread

👝 How to Store Leftovers

This bread is best served warm. Store the leftovers in an airtight container and save a little extra glaze for the side. When you’re ready for the bread, place it on a baking sheet and into a 350-degree oven until warmed through.

🤔 Common Questions

What if my cut bread doesn’t fit in the pan?

That’s okay! It should expand on the second rise to the size of the pan.
