I accidentally left my starter on the counter for 3 days. Is it ruined?

Not at all! Your starter is more resilient than you think. It might be a little sluggish, but with one or two feedings (or a rest in the fridge), it’ll spring back to life.

What’s the best way to pause my starter while I’m on vacation?

Simply seal the jar and tuck it into the fridge. It will happily wait for you while you’re away. When you get back, give it a feeding or two, and you’ll be ready to bake again.

Do I really need to use my starter every day?
