This is one of those dishes that look super complicated and took a lot of time, when really it was 4 ingredients and took 20 minutes. Those are my favorite dishes to make! There is a special flavor that comes from combining fresh summer blackberries with sweet and sticky balsamic glaze. Plus, it’s baked on top of cheese, inside of bread. There is so much to love about it.

🍲 Ingredients

Sourdough LoafYou can use any Boule (round) sourdough bread that you like best. But if you are preparing your own – here is my tried and true recipe!

Brie cheese – 8 oz brie wheel.

Blackberries – 1 cup of fresh blackberries, if you are using frozen – thaw and drain them first.

Balsamic vinegar – 1 -2 tablespoons of good quality balsamic vinegar

Honey – For the sweetness in the glaze.

Salt – Just a pinch, so use what you have on hand.

👩‍🍳 How to Make Blackberry Balsamic Baked Brie

  • Start by prepping your sourdough loaf.
  • If you are making your own loaf of sourdough bread, shape it into a boule shape for better brie placement. Bake it just as you normally would, but when there is 10 minutes left, remove and let cool slightly before adding your brie.
  • Unwrap the brie cheese and score with a knife in a criss cross pattern at the top of the cheese.
  • Using the wheel as a guide, place the cheese on the loaf and cut around in a circle halfway into the bread. Remove the bread from the middle and set aside for dipping.
  • Place your scored brie directly into the opening in the middle of the bread.

Balsamic Glaze

  • In a small saucepan, combine blackberries, balsamic vinegar, and honey.
  • Cook over medium heat, stirring gently, until the blackberries soften and the mixture thickens slightly, about 5-7 minutes.
  • Remove from heat and let cool slightly.
  • Dollop and spread the balsamic glaze all over the top of the wheel of brie.
  • Preheat a Dutch oven to 400 degrees. When your oven is preheated, place your bread on a piece of parchment paper and carefully place into the hot Dutch oven.
  • Bake with the lid on for 10 minutes, remove the lid and bake for another 10 minutes until the cheese is melty.
  • Serve warm with extra bread and crackers and enjoy!

  • If you have fresh summer herbs in your garden, add them to the inside of your bread for a nice aromatic touch!
  • You can add a sprinkle of chopped nuts (like pecans or walnuts) inside the bread or on top of the berries for extra crunch.
  • For a more pronounced balsamic flavor, drizzle additional balsamic glaze before serving.
  • If you don’t have a Dutch oven, you can bake your bread on a baking sheet and cover the top with aluminum foil to keep the bread from browning too fast.
  • If you don’t have a loaf of bread, bake your brie inside of a puff pastry! 🙂
