I love two things – being creative and feeding people. This bread satisfies both of those cravings. Cinnamon Apple Baked Brie is not only a delicious bread, but a beautiful centerpiece for a fall gathering with friends.
🍲 Ingredients
Sourdough Loaf – This is my beginner sourdough recipe, it makes two loaves and perfect for this occasion because you can use one as a baked brie bread, and the other as a regular loaf for butter and jam or dipping into the brie!
Brie – 8 oz round of brie cheese. It does make a difference if you buy high quality brie so that it is extra creamy and melty.
Apples – Honeycrisp and tart varieties like Granny Smith work beautifully, but feel free to experiment with your favorites.
Butter – 2 tablespoons for richness in the apples, and on top of the brie. I prefer salted but use what you have.
Cinnamon – it’s just not a fall recipe without ground cinnamon.
Apple pie spice – for extra flavor, but if you don’t have apple pie spice you can use extra cinnamon.
Brown sugar – For sweetness, and it melts onto the apples to make it sticky and sweet.
Toppings – optional, but I like to use nuts like pecans, walnuts or sliced almonds. This can be baked with the apples and cheese or served as a garnish on the side.
👩🍳 How to Make Cinnamon Apple Baked Brie Sourdough
- Using a serrated bread knife, start by cutting a round out shape of the top of your artisan bread using the brie cheese as a measuring tool and pull out the top of the bread.
- Score the top of your brie with 4 – 5 diagonal cuts, rotating until they lines are in a criss-cross pattern. Place the wheel of cheese directly into the cut out space of your bread.
- Thinly slice 2 large apples. Melt 2 tbs of butter on the stove over medium high heart. Add your sliced apples, cinnamon, apple pie spice, brown sugar, and salt. Mix until everything is melted together. Cook down for 5-10 minutes until the apples are soft. (if you want to cook your cuts with the apples, add those in now too)
- Spoon your cinnamon apples directly on top of your brie cheese.
- Transfer your loaf and cheese into a Dutch oven.
- Preheat your oven to 400 degrees and bake for 15 – 20 minutes, or until the cheese is nice and melty and the bread is golden and crusty.
- Carefully remove your bread from the Dutch oven and onto a cutting board, top with your nuts and slice and serve warm!

- If you are making your own sourdough bread from scratch for this recipe, score your bread into a large “x” pattern so it is easier to cut out the top for your cheese.

Bake your sourdough at 450 with the lid on for 30 minutes, remove and let cool slightly before cutting the top and placing in your cheese and toppings. Place back into the Dutch oven, drop the heat to 400 degrees and bake with the lid on for 10 – 15 minutes. If you want a darker, crustier bread, bake with the lid off.
